Claus Ilsøe lives with his family on a small country estate near Bylderup Bov in Southern Jutland.
In this scenic area, he runs his small niche vegetable farm with a treasure trove of exciting vegetable varieties.
His entire garden is filled with the most exquisite and unique vegetables. Claus is not interested in quantity, but about growing the best and tastiest ingredients.
Claus loves, among other things to immerse himself with cabbage, salads, and special root vegetables.
At Syttende, we are enthusiastic about Claus’ constant search for new nuances of taste, and we love exploring new varieties together, which will hopefully enter Syttende’s gastronomic universe.
Among all that search – we certainly also find varieties that were not exactly what we had hoped for. But nevertheless, it makes our shared passion even greater when we succeed in finding the right crop.
