In the months of autumn, we are busy picking nuts, fruits and berries that enable us to bring sun-ripened autumnal flavours into the kitchen before the days soon become colder and darker. Over the past few months, our chefs have gathered lots of hazelnuts, apples, plums, elderberries and blackberries at Kær Vestermark just outside Sønderborg.
Kær Vestermark is only a twenty-minute walk along the fjord from Syttende, and you can enjoy the views across this scenic, protected area from the restaurant. Kær Vestermark is an old common area where village cattle would graze in the olden days. Today, the area’s wild hedges are brimming with all sorts of fruit, nuts and berries, so it is no wonder that Kær Vestermark is also known as Sønderborg’s wild vegetable garden.
Although this year’s yields of blackberries, plums and elderberries may be over, Kær Vestermark still abounds with delicious hazelnuts and many different varieties of apples.
